
Pendragon’s Yuletide Syllabub
In Hogwart’s at Christmas, and indeed, on many other occasions the students drink “Butterbeer” in the Leaky Cauldron. At Pendragon’s we have our own signature celebration drink, which is perhaps not so very different from Butterbeer... Pendragon’s Yuletide Syllabub!
Syllabub is an ancient drink, and it is a shame that it has fallen out of favour as it really is very good, and a cinch to make too. The name Syllabub comes from two Elizabethan words, the second of which is misspelt; Bub was the Elizabethan slang for a bubbling drink, and Sill was part of the country from which the wine Sill or Sille took its name.
Our Pendragon’s signature Syllabub is based on an old recipe for a slightly more lavish festive Syllabub featuring Sherry and Brandy rather than the more common sparkling White Wine. For everyday occasions, use a white wine.
Pendragon’s Yuletide Syllabub (Serves 4)
You will need:
The Juice and grated rind of 2 large lemons
2 Glasses of sherry
2 smaller glasses of Brandy
7 ounces of brown sugar/sugar to taste
1 pint of double cream
A pinch of Nutmeg
Method:
1. Simmer your lemon juice and grated rind over a low heat.
2. When it is warm, dissolve your sugar into it.
3. Now add your spirits and stir gently. Add the double cream.
4. Transfer into a jug and whisk to a froth. A little milk may be added to thin to drinking consistency if necessary- but don’t overdo it or it may curdle!
5. Pour into 4 small goblets and sprinkle with a little Nutmeg.
